SOUS CHEF
RESPONSIBLE TO: Head Chef
HOURS OF WORK: 45 hours over a five day period
SALARY: £35,000. PA
STATEMENT OF PURPOSE:
We’re looking for an enthusiastic Sous Chef to help lead our skilled kitchen team.
As Sous Chef you are a vital part of the kitchen team. You will support the Head Chef, spending your days serving delicious food in a well-equipped kitchen, developing your skills under the guidance of our talented Head Chef Alex.
KEY RESPONSIBILITIES
Assisting the Head Chef with effective kitchen management
As a Sous Chef, you will produce a high standard of food, develop menus
Managing a section in the kitchen cooking from fresh ingredients
Eliminating wasteful or unprofitable practices
Ensuring food safety standards are adhered to
Controlling the order and storage of food supplies
Being aware of and supporting the delivery of financial targets
You should have experience of working with fresh ingredients and cooking from scratch.
Having innovative ideas and the ability to implement them is important. Proven previous experience is essential. COMMIS CHEF
RESPONSIBLE TO: Head Chef
HOURS OF WORK: 45 hours over a five day period
STATEMENT OF PURPOSE:
Responsible to the Head Chef for –
The effective and efficient delivery of all food provided by the hotel, with the aim that they provide consistently the highest standard of cuisine and adhere to all the food hygiene procedures while completing their tasks.
KEY RESPONSIBILITIES
- To assist the Head Chef in delivery of all food served at the Trout Hotel.
- Adhere to strict food hygiene procedures.
- Prepare and serve all meals to the required standard.
- Ensure all prep is produced on the section that you are working on.
- Ensure you work to the standard operating procedures for the department.
- Assist other members of the team in the kitchen when required.
- Understand and promptly respond to checks.
- Meet the needs of our customers if physically able to do so.
- Complete Health and Safety documentation when required.
- Comply with all relevant legislation relating to health and safety, food hygiene regulations and licensing legislation.
- To promote a safe, healthy and environmentally secure environment.
- Attend training sessions and training activities as requested.

JUNIOR SOUS OR CHEF DE PARTIE

WAITING/BAR STAFF
RESPONSIBLE TO: Restaurant Manager
HOURS OF WORK: A variety of Shifts Available
JOB TYPE: Part-time, Temporary,
SALARY: £9.00 per hour
STATEMENT OF PURPOSE:
Responsible to the Restaurant Manager for:
The effective service of the food and beverage operation provided by the Restaurant, Bistro, Lounge Bar, Function and Conference facilities, with the aim that they provide the highest level of customer service.
KEY RESPONSIBILITIES
- Adhere to the standard operating procedures for your department.
- Preparing the Restaurant, Bistro or Bar Areas for service
- Serving food and beverages as per standards.
- Dealing with customer requests as per standards.
- Promote a customer focused culture within the Restaurants
- Taking orders, processing bills and payments via EPOS
- Cleaning down and keeping dining and subsidiary areas, clean, safe and organised.
- Maintaining the cleanliness of the Restaurant, Bistro, Lounge Bar.
- Report any maintenance issues to the Restaurant Supervisors.
- Attend training sessions and training activities as requested.
- Comply with all relevant company legislation relating to health and safety, food hygiene regulations and licensing legislation in your department.

SKILLS
The ability to work and communicate effectively with the general public, other members of the team and with all levels of management, good timekeeping. Previous experience working in hospitality or customer service role.
RECEPTIONIST
RESPONSIBLE TO: Front of House Manager
HOURS OF WORK: 30 hours over 4 days
JOB TYPE: Permanent
SALARY : £9.50 per hour
STATEMENT OF PURPOSE:
A rare opportunity to join our well established front office team. Working 30 hours over 4 days (including weekends and Bank holidays) , the ideal candidate would need to be able to work a combination of early and late shifts on reception. Experience in a similar role using hotel reservations software Rezlynx and Microsoft packages is essential. The job holder would need to have substantial experience in hotel operations at 4 star level and have excellent customer care skills.
KEY RESPONSIBILITIES
- Maximising guest’s satisfaction.
- Deal with all telephone enquires in a polite and effective manner.
- Ensure that excellent customer care is promoted throughout the department.
- Ensure the reception department work to the Standard Operating Procedures.
- From initial phone call, reservation, confirmation, check in, stay and check out.
- Ensure that correct information is available for each department within the hotel.
- Deal with any customer requests as appropriate or pass to the relevant department.
- Maximise room occupancy.
- Maximise room rate.
- To ensure the Trout Hotel comply with all relevant legislation relating to health and safety, food hygiene regulations and licensing legislation
- To promote a safe, healthy and environmentally secure environment.

HOUSEKEEPING ASSISTANT
RESPONSIBLE TO : Head Housekeeper
HOURS OF WORK : Part Time
JOB TYPE : Part time
SALARY : £ 9.00 per hour
STATEMENT OF PURPOSE:
Responsible to the Head Housekeeper for: –
The effective cleanliness and maintenance of the Trout Hotel, with the aim that they provide the highest level of cleanliness throughout the hotel and provide excellent customer service.
KEY RESPONSIBILITIES
- To ensure agreed standard of cleanliness and hygiene are maintained in all bedrooms and public areas agreed with the Head Housekeeper.
- To look for areas that the housekeeping department can improve on the cleanliness and facilities we offer our guests.
- To provide excellent customer service.
- Maintain the Standard Operating Procedures provided for the housekeeping department.
- To ensure that all equipment, furniture and furnishings are maintained, checked and kept in good working order and report relevant faults.
- Ensure that requests from guests are carried out in a timely manner.
- Ensure that any complaints or feedback are dealt with in a timely manner and passed on to the Head Housekeeper.
- Liaising with your supervisor and head housekeeper as required.
- Take all reasonable steps to ensure the safety of guests, property and the building.
- To promote a safe, healthy and environmentally secure environment.
- To ensure the ongoing compliance with statutory requirements relating to the work of the Department.
- Adhere to all health and safety procedures.
- Attend training sessions and training activities as requested.
- Any other reasonable request of the line manager.
